The gherkin (Cucumis sativus) is a cucumber variety grown specifically for its small fruit, harvested young and used for pickling. The plants are vigorous climbers with yellow flowers, producing abundant short, crisp fruit with a slightly warty surface. Harvested at 5–8 cm, gherkins are ideal for preserving in vinegar, keeping their firmness and flavour. Like all cucurbits, they prefer warmth, sun and fertile, well-drained soil with regular watering. They are highly prized in French and Romanian cooking for the fine pickles they make.
