Kale (Brassica oleracea var. sabellica) is a cabbage variety with curly or crinkled leaves that does not form a head. The dark green or purple leaves are very rich in vitamins, minerals and antioxidants, and are considered a superfood. They are eaten raw in salads, in smoothies, boiled, or baked as crisps. The plant is very cold-hardy, and the leaves become sweeter after frost. Kale is easy to grow and provides long harvests, even in the cold season.
