The broad bean (Vicia faba) is an annual legume, one of the oldest cultivated crops, cold-hardy and easy to grow. It produces large, thick pods containing flattened seeds rich in protein, fibre and minerals. Young beans are eaten cooked, while mature, dried beans are used in soups and purées. The plant has white flowers with black blotches and is sown early in spring, or even in autumn in mild areas. The broad bean enriches the soil with nitrogen and is valued as a nutritious legume in Mediterranean cooking.
