Cauliflower (Brassica oleracea var. botrytis) is a vegetable of the cabbage family, grown for its white head made up of compact florets. The dense curd, usually white but sometimes orange or purple, is eaten boiled, roasted, steamed or pickled. It is rich in vitamin C, fibre and beneficial compounds, and is a versatile vegetable in the kitchen. The plant prefers cool weather and fertile, well-watered soils; the head is sometimes shaded from the sun to keep it white.
