Chard (Beta vulgaris subsp. vulgaris), also known as leaf beet, is a vegetable grown for its leaves and fleshy stalks. The stalks may be white, yellow, orange or red, giving the plant a strikingly decorative appearance. The leaves are cooked like spinach, while the fleshy stems are prepared separately, and both are rich in vitamins and minerals.
