Chard (Beta vulgaris subsp.
Chard (Beta vulgaris subsp. vulgaris), also known as leaf beet, is a vegetable grown for its leaves and fleshy stalks. The stalks may be white, yellow, orange or red, giving the plant a strikingly decorative appearance. The leaves are cooked like spinach, while the fleshy stems are prepared separately, and both are rich in vitamins and minerals. The plant is hardy, productive, and harvested progressively, leaf by leaf, throughout the season. Chard combines culinary value with ornamental looks, and is also suitable for planters.
