Tarragon (Artemisia dracunculus) is an aromatic perennial of the Asteraceae family, with narrow, fragrant, slightly aniseed leaves. It is a fine seasoning, prized in French cooking for sauces, flavoured vinegar, pickles and meat and fish dishes. The plant prefers sun and well-drained soils and returns year after year in the garden. The leaves are used fresh or dried, giving a distinctive, slightly sweet-spicy aroma. Tarragon is essential in traditional Romanian pickles and soups.
