Chinese cabbage (Brassica rapa subsp. pekinensis) is a vegetable with tender, elongated leaves forming a loose oval head. It has a mild, slightly sweet taste and is eaten raw in salads, stir-fried or fermented, as in the Korean dish kimchi. It grows quickly, prefers cool weather and fertile soils, and suits autumn cropping. Its succulent leaves, with broad white ribs, are rich in vitamins and water. It is a popular vegetable in Asian cooking, increasingly appreciated in Europe too.
