Lovage (Levisticum officinale) is a vigorous perennial aromatic plant of the Apiaceae family, with an intense, celery-like aroma. Its leaves are used to flavour broths, soups and stews, and are a fixture of Romanian cooking. The plant grows tall, is very hardy, returns year after year and prefers fertile, moist soils. It has recognised digestive and diuretic properties and can also be used dried. Lovage is a powerful seasoning, used sparingly for its characteristic aroma.
