Cabbage (Brassica oleracea var. capitata) is a vegetable of the Brassicaceae family, grown for its dense head of overlapping leaves. There are white, red and savoy types, used fresh in salads, cooked, fermented or for stuffed cabbage rolls. It is rich in vitamin C, fibre and beneficial compounds, and stores well through winter. The plant prefers cool weather, fertile soils and regular watering, and is cold-hardy. Cabbage is a staple of Romanian and Central European cooking.
