Brussels sprouts (Brassica oleracea var. gemmifera) is a vegetable that forms numerous small heads, like miniature cabbages, along the stem. These green buttons are eaten boiled, roasted or steamed, with a slightly sweet taste that intensifies after frost. The plant needs a long, cool season and fertile, well-structured soil. It is rich in vitamins, fibre and antioxidants, making it a valuable autumn–winter vegetable. Harvesting is progressive, from the bottom of the stem upwards, as the sprouts form.
